I feel like the K&N added a bit of low-end torque, but that could be all in my mind. Either way, a lifetime warranty + a trusted brand is enough to justify the upgrade for me.
BMW - I put the Targa FE on last Friday and had the same problem; pulled the left bolt right through the rubber. Those studs with the rubber heads are a terrible design. I can't believe they just wouldn't put a bolt or spacer in the rubber head so that it couldn't pull. I used them anyways...

On a side note, how was the install? I have the Targa FE sitting in my garage now; planning on installing it along with my K&N air filter and Phillips Lockhart Flushmounts this weekend.
I'd say you'd find many more uses for a 3/8" over a 1/2", regardless of adapters. 1/2 is for pretty big jobs; I wouldn't say you'd need that much power for anything on your bike, or any car smaller than a full-size truck.

The bolts that came with my IR sliders were definitely longer than the stocks, by about 3/8". Since the sliders are just about that thick, I'd say mine went into the engine just as far as the stocks.
I've had the Harbor Freight stand for about a month now, and it's pretty solid - especially for the price. The vinyl-dipped parts are pretty soft, but I would say duct tape or something isn't a bad idea.
