Devil's advocate - it screwed up at 85mph, no? Unless you live in Texas, there's no reason for them to ever test the bike at 85, since you can't legally drive that fast anywhere.. Sure, they could've thrown it on a dyno for you or you could have made your own:

How many miles did you put on the bike since they did the work - if it's not too many, ask them why they don't warranty their work. And then find another dealer anyway - seriously.

maybe 100 miles tops?

Ducati (Yamaha in our case) engines are the result of countless hours of development work on a dyno. They are designed as a unit with airflow and exhaust flow optimized together for each engine configuration. When you change things like intake and exhaust configurations it’s a hit-and-miss proposition. Many times you make improvements in one RPM range and performance at other speeds decreases. Without dyno before-and-after checks, multiple changes can produce confusing results.

Also, seat-of-the-pants tuning can be misleading. If a change, say, reduces mid-range performance at the expense of high end power the engine feels peakier and this feels like an improvement. But is it? Strange dips in dyno horsepower and torque curves can and do occur at speeds where you spend most of your time riding.

Glad to see you are narrowing down possible issues.

I don't go to a mechanic so he can guess.
If he is not skilled enough to utilize his resources as a shop owner, then I really don't know what he is doing? Living out some half-fantasy of motorcycle maintenance expertise?
 
Maybe you should let them install the exhaust , next thing you know ur bike tops out at 55 mph and you don't ever have to worry about getting a speeding ticket on the interstate :))
That's why I do the bike maintenance myself....

I dont have the time in all honesty. Im full time college and work 60-70 hrs a week. The time I have off I want to spend doing something with the wife or actually riding the bike not wrenching on it. But I understand where your coming from
 
my thoughts are electrical cautious... and you know i'm going to school for that stuff. I woudl offer to help you but that means another man putting his hands on your girl
