Changing sprockets?

I am going to have to change my sprockets and chain on my bike probably this summer, and I was wondering if I went down a tooth for the countershaft sprocket, what would I have to change the rear sprocket to, to get more bottom end. And how much top end would this take away from my beast?

Eyeball 5 MPH per tooth on the front. (+/- 3 tooth on the rear)

I have a +2 sprocket available cheap - it's a Thrust racing sprocket. $20 plus shipping.

I can get really good deals on sprockets and chains, but I think I may want a little more bottom end. I'm not one to pin the throttle and stay at the top speed, I just want a little more oomph when I take off from the line.
