The stock exhaust is all one piece. If you want to be able to reverse any mods you make, you are going to have to buy a complete aftermarket system. I'd just leave it stock for now and wait until you're in Germany to do any exhaust changes after you know what the laws are.
It's easy to calculate fuel mileage without trusting the fuel gauge. Just reset your trip meter to 0 when you refuel. Then when you fill-up the next time, divide the miles listed on your trip meter by the amount of fuel added. Then reset the trip meter and start the process again.

Don't worry about stands. Just make sure the tires are aired up properly. My bike sits in the garage for a few months (not on stands) in the winter and I've never had flat-spot issues.

All modern motorcycles will do fine in winter conditions. I've ridden my FZ6R in temps down to 36 degrees.
